Peach Cake
Peach Cake

Ingredients for 4 people:
- 5 peaches
- 150 gr. sugar
- 150 gr. butter
- 150 gr ground almonds
- 60 gr. flour
- 3 eggs
- some icing sugar
Preparation:
Put the peaches in some boiling water for a while and immediately after put them in cold water. Peel and cut them in two halfs. Take them off the stone.
Whip the butter in a bowl with the sugar until the cream gets White. Add the eggs yolk, the almonds and the flour to the cream done previously.
After that, whisk the whites up to firm peaks and mix it slowly with the cream tablespoon a tablespoon.
Line a cake tin with greaseproof paper and place the peaches at the bottom. Cover the peaches with the cream and bake it for 30 min at 180ºC. Unmold the cake and let it get cold.
Bake the almonds, grind them and sprinkle them on the top of the cake with some icing sugar.
